Kidvelociraptor’s Original Sugarspice Cookies


1 cup Country Crock (or 2 Sticks Butter)
1 1/2 cups White Granulated Sugar
1 tsp Vanilla Extract
1 tsp Ground Cinnamon
(Option #1: 1/4 tsp Ground Nutmeg & 1/4 tsp Cloves)
(Option #2: 2 tsp Orange Extract, or 2 tbsp Orange Liqueur/Triple Sec)
(Option #3: 8 drops Red Food Dye)
1/4 tsp salt
1 tbsp Baking Powder
2 Eggs
2 1/2 cups All-Purpose Flour

Coating Ingredients:
1 tsp Ground Cinnamon
1 tbsp White Granulated Sugar (or something Decorative Red Sugar)

1) Preheat oven to 350 F.
2) Cream together butter substitute & sugar in a large mixing bowl.
3) Add cinnamon (& any other spices) plus salt.
4) Stir in vanilla extract (& optional red red food dye).
5) Add eggs, combine thoroughly.
6) Pour in flour & blend until smooth.
7) Refrigerate dough until firm, about 30 minutes, or freeze for 10.
8) Combine cinnamon & sugar in a small Tupperware.
9) Using a spoon, scoop up small balls of cookie dough, & roll them in the cinnamon sugar mixture before placing them about 2″ apart on a baking sheet & gently flattening (not too much, or they’ll turn out crispy.)
10) Bake at 350 F for 8 minutes to get soft, chewy, fluffy, doughy cookies, or 12 minutes for crunchy cookies (10 minutes at 375 F)
11) Devour.
